The only reason the Vocoret Chablis Vaillon 1er didn't make our Top 5 Of 2025 was that it wasn't readily available at the time.
But it was on the list and available now.
It is so good, we had to make it part of our Cum Laude, honorable mentions.
Only a few cases exist, and they are worth it!
Vaillons are often the first Chablis to be snapped up among the 1er Crus. Vaillon soil is rich with clay and minerals from fossilized shells of prehistoric oysters and adds unmistakable depth and character to the wine.
A gorgeous, vibrant Chablis with notes of Meyer lemons, citrus blooms, and spices is complemented by oyster-shell minerality overtones. Citrus, orchard fruit, and a crisp, acid-driven minerality are all layered into the nuanced flavors. A generous wine with lots of life and brightness that will only get better in the cellar, if you can resist not drinking right away!
