Some prestigious names come to mind when considering the top Chablis producers: Dauvissat, Raveneau, and Defaix, for example, are exceptionally rare and expensive. A bit more accessible - but no less in quality - is Vocoret.
Vocoret is well-known because of its five generations of winemaking tradition.
Vaillons are often the first Chablis snatched up of all the 1er Crus; the Vaillon soil is rich with clay and minerals from fossilized shells of pre-historic oysters and adds unmistakable depth to the wine.
A gorgeous, vibrant Chablis today! Notes of Meyer lemons, citrus blooms, and spices tare complemented by oyster-shell minerality overtones. Citrus, orchard fruit, and a crisp acid-driven minerality are all layered into the nuanced flavors. A generous wine that has lots of life and brightness that will only get better in the cellar, that is, if you can resist not drinking it right away.
Puligny-Montrachet, Meursault, and Corton-Charlemagne - they are all sensational white Burgundies. But for every day, you cannot beat the value of Chablis. It is more accessible in terms of price and food pairing.
The 2020s are stunning and have lift and vibrancy. 2020 yields were down significantly, and availability of this 1er Chablis is about 50% of what it was last year.
