In 1985, amid an economic crisis, Elio decided to take a risk - modernize his winemaking and barreling techniques contrary to 100+ years of tradition passed down from generation to generation.
With a chainsaw in hand, he tore down his botti (large Slavonian oak casks) and immediately moved to smaller French barriques.
With this change, Elio was met with disdain from local winemakers - even from his father, who disinherited him from the family. But, the wine began to sell out!
Ruby red with violet reflections. On the nose, aromas of violets and black cherry emerge. This Baby Barolo is full-bodied with balanced acidity and nice lingering flavors of dark red fruits including cherry, rose petal, and raspberry.
Known for his gorgeous Baroli, this Baby Barolo (Nebbiolo with less time in bottle than a Barolo) comes from two specific sites: one directly adjacent to the winery in La Morra; the other from Monforte, right next to the prized cru of Ginestra.
Pairs with any autumnal cuisine you can create in the kitchen (especially with mushrooms and truffles).
